Baked mince cutlets

Baked mince cutlets or croquettes are a staple for entertaining, in our home. They can be prepared ahead and baked on the day, required. They are traditionally fried but I prefer them baked. They are tasty and all enjoy them.


Meat mince   1 kg

Water  2 cups

French shallots  4

Ginger  2 inches long

Green chilly   1

Five spice powder   3 teaspoons

Potatoes   5

Eggs  2

Breadcrumbs   2 cups

Oil   3 + 2 tablespoons

Salt  2 teaspoons

Boil the mince with water and a teaspoon of salt. Boil the potatoes and mash them. Heat 3 tablespoons of oil in a pan and sauté  the finely chopped shallots, ginger and chilly. Add the mince and saute well. Add the spice powder and salt. Let the mince cool down a bit. Mix in the mashed potatoes. Check seasoning.

Keep breadcrumbs in a wide bowl. Lightly beat the egg whites in a small bowl. Add the yolks to the meat. Form small patties and dip in egg whites and roll in breadcrumbs. The croquettes can be refrigerated or frozen. Preheat oven to 160 degrees Centigrade. Place cutlets on greased baking sheet and bake for 20 minutes. Spray or simply add some oil on top of the cutlets and grill/broil for 4 minutes or until they are browned to your liking. Turn them and grill again till brown. Enjoy.








A kilo of mince gives approximately 30 cutlets, depending on the size of each and the quantity of mash.
