Saffron+cardamom+pistachios is my favourite combination of flavourings for sweet dishes. The aroma and taste gives a deep satisfaction and happiness, that is quite addictive. I have to make an effort to stop eating too many sweets. The saffron pistachio hearts are a Christmas favourite and the kids often request these cookies during school holidays.
Recipe:
Saffron 1/4 tsp
Warm milk 4 tsp
Cardamom pods 6
Nutmeg powder 1 tsp
Pistachios 20
Flour 1 1/2 cups
Castor sugar 1/2 cup
Ghee 1/2 cup
Powder the cardamom and roughly crush or chop the pistachios. Soak the saffron in the warm milk. Mix the ghee and sugar in a stand mixer. Crush the saffron and add it along with the cardamom and nutmeg, and mix. Add the flour and mix well. Preheat oven at 175 degrees. Divide the dough into 4 portions and roll them out. Sprinkle some pistachio pieces and roll out gently. You could also mix all the chopped pistachios into the dough. Cut out shapes, using cookie cutters and bake for 10-15 minutes. Cool n enjoy 🙂
